Method

  1. Prepare the potatoes
    Peel the potatoes and cut them into small cubes. Place them in a baking dish (about 34×24 cm), drizzle generously with olive oil, and season with salt, pepper, and oregano. Roast them in the oven until they soften slightly.
  2. Chop the vegetables
    While the potatoes are baking, finely chop the spring onions and bell peppers. Set aside.
  3. Make the egg mixture
    In a large mixing bowl, whisk the eggs together with the milk. Season with a little salt, pepper, and oregano. Crumble in the feta cheese and add most of the gouda (reserve some for topping). Mix well.
